Top 5 Easy Gluten-Free and Vegan Recipes for Quick, Nutritious Meals

 Introduction:

This collection of recipes mainly focuses on the whole foods with minimal processing and simple method to prepare them. The recipes are gluten-free and can be easily adopted by vegan and vegetarians as their diet. The quantity and serving is for two persons and it can be increased further as per our need. Let’s have a look at the recipes one by one and try to use them as our meals.


1.     Gluten Free (Vegan Option)

A versatile bowl that comes together in under 30 minutes. Perfect for a nutrient-dense lunch that keeps you full for hours.

Ingredients:

  • 1/2 cup quinoa, rinsed
  • 1 cup water
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 tea spoon smoked paprika
  • 1 table spoon olive oil
  • 1 cup cherry tomatoes, cut into half
  • 1/2 diced cucumber
  • 1 sliced avocado
  • Handful of fresh parsley, chopped

For the Lemon-Tahini Dressing: 

§  2 table spoon tahini

§  juice of 1 lemon

§  2 table spoon water

§  1 small garlic clove (minced)

§  Salt and pepper to taste.

Instructions:

§  Combine rinsed quinoa and water in a small pot for cooking. Bring it to a boil, then reduce heat to low, cover it properly, and simmer for 15 minutes. After 15 minutes remove it from the stove and let it cool down for 5 minutes and then fluff it with the help of a fork.

§  Take a pan and heat the olive oil in it. Add the chickpeas and smoked paprika in it and sauté for 5  7 minutes.

§  Prepare all the vegetables along-with the dressing. For dressing, whisk together tahini, lemon juice, water, and garlic until it becomes smooth. First it seems to be thick but then it thins out. Add some salt and pepper as per the need and taste.

§  Finally, assemble the bowls by dividing the cooked quinoa between two bowls. Top these bowls with spiced chickpeas, cherry tomatoes, cucumber, avocado, and parsley. In the end, add the lemon-tahini dressing and enjoy the meal.

§  5 – 6 oz salmon fillets (02)

§  Asparagus with woody ends removed/ trimmed (1 bunch)

§  Sliced lemon (01)

§  Olive oil (2 table spoon)

§  Dill dried or fresh (1 table spoon)

§  Salt and black pepper to taste

Instructions:

§  First, preheat the oven to 400°F (200°C).

§  Secondly, spread the asparagus on a large baking sheet with 1 table spoon olive oil, salt, and pepper in the form of layer.

§  Thirdly, place the salmon fillets on the asparagus. Drizzle with the remaining olive oil and marinate with minced garlic, dill, salt, and pepper. Place 2-3 lemon slices on top of each fillet.

Instructions:

§  First, heat coconut oil in a large pot over medium flame. Sauté onion and carrots for 5 – 7 minutes so that they are softened

§  Secondly, add garlic and ginger and cook for one more minute. Then add the rinsed lentils, vegetable broth, coconut milk, and turmeric. Stir consistently to combine all the things properly.

§  Thirdly, cook for 15 – 20 minutes so that it boils, then reduce heat and simmer for 15-20 more minutes (the lentils are softened and broken down, making a thick soup).

§  Lastly, add salt and pepper to taste. The dis is ready to be served after garnishing with fresh cilantro.
